At be&behappy, the mighty mung bean is one of our favorite diet staples. These little beans are packed with protein, resistant starch and health-boosting vitamins and minerals —  all working together to promote healthy digestion and natural detoxification. Whether you’re searching for a natural means for ridding your body of toxins or simply want a delicious, nutritious boost, you’ll love this Mung Bean Drink recipe.

Ingredients:

  • 2 cups green organic mung beans (soaked 6-8 hours / best over night)
  • 2 pinches hing (Asafoetida)
  • 1 teaspoon Cumin seeds
  • 1/2 – 1 teaspoon fresh ginger (grated)
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1/4 – 1/2 teaspoon Ajwain
  • Curry leaves
  • Salt

Cooking time for mung beans: 14 min. in a pressure cooker; 40-55 min. if using a normal pot

Before you begin cooking, rinse the soaked mung beans carefully. Once washed, place the mung beans in a pressure cooker, at this point with salt only, until they are soft and cooked through. While the beans are cooking, place ghee in a heated pan, adding the spices in the order of the list above. When these spices are toasted, you’ll smell the aroma. We recommend letting the spices simmer in water so that the full aroma can unfold.

Once the mung is finished cooking, add the ghee and spice paste into the cooked mung beans. Stir slowly, and cook for another 5 minutes over low heat. Strain the liquid through a sieve and add water as needed to create your preferred liquid consistency.

Season the drink with lime juice and black salt.

Note: Don’t let the cooked beans go to waste! We love using the cooked mung beans as a base for tasty vegetarian burgers. Simply add spelt flour, mustard, pepper, salt, oregano or any other herbs you like to the beans, and mash together to form a burger patty. Cook the patties in the oven at 375 degrees for 15 minutes. When the patties are golden brown in color, they’re ready to enjoy!
